I love autumn, because it’s when squash starts showing up at the markets. And butternut squash is a comfort food from way back, when my mom used to buy the frozen blocks of it, then serve it with salt, pepper, and a pool of melty margarine.
Sometimes the simplest is also the best. Simply cooked fresh farmer’s market green beans (French haricots verts) are served with garlic toasted briefly in olive oil. Voila!
Is it possible to follow a special diet in France? I tried, and I’ll share my successes and failures with you. I was able to eat vegetarian (no meat). Pescatarians will have no problems visiting France, as there are many fresh seafood options. Enjoy these delicious Lebanese green beans that we had in Paris.
