I am pretty excited to announce that I’ve been invited to join the Cooking Light magazine Bloggers’ Connection. I read Cooking Light years ago when it first came out, and still have some of their light recipes in my binders from way back. I had not read it in a few years, and then happened upon it again when I started blogging.
I was so pleased to see the updated focus on fresh, healthy food with reduced sugar, healthy fats, farm-to-table, and artisan foods taking center stage.
It is, truthfully, the only food magazine I subscribe to, although I do sometimes buy others just to keep up.
So when they contacted me last week to let me know they were inviting me to join this group, I was pretty excited. The only missing piece for me in the magazine is a regular feature on gluten-free recipes, and they don’t actually usually have vegan recipes.
So my approach will be to showcase at least two Cooking Light recipes per month, on Thursdays, with my renovation below. That way you can see their original recipe and how I adapted it to my eating style.
This is not a paid position: I receive a subscription to the magazine and possibly some freebies in the mail (which you know I will turn into giveaways). It’s chance to help more readers find my little corner of the Interweb and to be associated with a publication I truly admire.
