Despite my red hair, I’m not Irish. Living in New York and then Chicago, I saw a lot of people use St. Patrick’s Day as a reason to get drunk in the middle of the day and pass it off as socially acceptable. So I wasn’t crazy about the holiday. But these rich chocolate cupcakes topped with minty-green frosting? Yes, please! In case you were wondering, it’s Paddy, not Patty. I always got it wrong. I made these last year for our community garden bake sale and they were a big hit.
While I can’t believe they are still dying the Chicago River green, my thoughts about St. Paddy’s Day have mellowed over time. I try to remember to wear green, and I can certainly get behind anything minty and anything made with potatoes. These cupcakes don’t keep well, so if you don’t have a crowd to eat them, make a half recipe.
