In Healing the Vegan Way: Plant-Based Eating for Optimal Health and Wellness, Chef Mark Reinfeld makes the case for a nutrient-dense, plant-based diet as the basis for healing many diseases currently plaguing our country. The book provides an opening section that discusses preventable health challenges, an overview of the variety of diets out there, the “extraordinary” health benefits of raw whole foods, and meal plan. The 200 recipes are divided into: easy pantry basics (nut milks, spice blends, sauces), breakfast, drinks, savory snacks and appetizers, salads and sides, dressings and sauces, soups and stews, main dishes, and desserts. I have eaten many times at the author’s Blossoming Lotus restaurant in Portland, OR and his recipes are incredible.
