Beth Hillson is the President of the American Celiac Disease Association, and has been living gluten-free for forty years. She’s also the food editor of Gluten-Free & More magazine. If you are looking to go gluten-free, were recently diagnosed, or have someone in your life who needs to avoid gluten, I can highly recommend this reference book: The Complete Guide to Living Well Gluten-Free: Everything You Need to Know to Go from Surviving to Thriving.
Layout and design:
The book is organized in the following manner:
Part One: Reasons for adopting a gluten-free lifestyle. Chapters include essential things you need to know about celiac disease, getting tested, the spectrum of gluten-related disorders, how to choose a doctor, and the diet’s the medicine (for now).
Part Two: Diet, when food is medicine. Chapters include gluten 101, gluten everywhere (how to find hidden gluten in surprising places), food shopping, setting up a GF kitchen, and cooking tips. It includes 15 recipes.
Part Three: Lifestyle, how to go from surviving to thriving. Chapters include eating out and traveling safely, socializing, relationships (including dating and sex), coping, and final thoughts about living well. The book is nicely designed, with easy-to-read fonts.
The 15 recipes illustrate that you don’t have to give up your favorite foods: apple pie with flaky piecrust, banana bread, buttermilk biscuits, birthday cake, chicken and parsley dumplings, chicken parmesan, chocolate chip cookies, doughnut rounds, French bread baguettes, gravy, lasagna, oven-fried chicken, pizza, sandwich bread, and soft pretzels. Recipes are conventional (sugar, eggs, meat, etc.) except for being gluten-free. Most recipes use xanthan gum.
What I liked about the book:
Friendly tone, well written, the most definitive guide I’ve seen on gluten-free living.
I wasn’t so keen on:
Nutritional analysis is not provided on the recipes, which would be helpful for low-sodium eaters. Otherwise, highly recommended as a reference guide.

A note about my book reviews: In the past, I tested at least three recipes from each book, took photos, and described my experience. Due to my dietary limitations (extremely-low-sodium for my Meniere’s Disease and trigger-free foods for migraine relief), it is no longer possible for me to test the recipes and do them justice.
