One of the biggest challenges about eating gluten- and sugar-free is that all the quick food items are now off limits. You have to read every label on prepared foods, and most of them have some kind of sugar or wheat product in them. In an ideal world, we’d be able to make homemade food for each meal. But that’s not real life. So, here’s a tip for lunches that are portable, and give you several options.
If you’re a sandwich eater, toast up some GF bread*, spread it with Annie’s Horseradish Mustard*, add a slice of cheese, the tofu slices, some lettuce… there you go.
If you don’t love sandwiches, or are trying to limit your grain calories, then simply throw the tofu on a plate or in a to-go container with those salad greens, add some dressing, and you’re good to go. (I find that if I have too many grain servings a day it’s really hard for me to maintain my weight, so I rarely eat sandwiches.)
Don’t have barbecued tofu handy? If you walk in the door and you’re starving, this will be ready in under 15 minutes. If you have more time, follow the barbecued baked tofu recipe here.
Take a package of extra firm tofu (I love Trader Joe’s High-Protein Tofu*) and slice it lengthwise into 1/2″ slabs. Turn on the broiler. Brush the tops with barbecue sauce (again, get the killer homemade recipe here) and put them on a piece of heavy duty aluminum foil. Broil for 5-6 minutes about 4″ from heat. Flip them over, being careful not to get sauce on the foil (wipe up any spills or it will smoke). Broil another 5-6 minutes.
While you’re broiling, make up your salad or your toast. Add extra BBQ sauce and enjoy.
* My current favorite bread is Udi’s gluten-free whole-grain bread. It’s like real bread! It’s not vegan (egg whites) but it’s so much better than other GF breads I make the exception. Rudi’s gluten-free bread is also very good, although I find it falls apart if toasted. Food for Life’s Rice Bread is okay; it’s less expensive, is vegan, and works if heavily toasted.
Annie’s Horseradish Mustard is the only mustard I’ve been able to find that’s made with apple cider vinegar. It’s not very sharp… just tastes like a nice stone-ground mustard.
