Joy the Baker COVER ARTToday’s giveaway is a beautiful, funny, delicious-looking cookbook that I am most happy to share. It was given to me by a friend. I have read it cover to cover, and I want to pass it along you to one of you. It’s Joy the Baker Cookbook: 100 Simple and Comforting Recipes. The giveaway includes a cupcake set from Wilton as well!

If you haven’t read Joy’s blog, stop reading this post and visit it immediately. It is beautiful, funny, stream-of-consciousness writing that will have you falling in love with Joy by paragraph #2. The only reason that I’m not keeping the book myself is that it is “a celebration of butter and sugar.” I learned a ton about baking reading it. Here’s what’s on my permanent cookbook shelf, in case you’re wondering.

A chocolate pumpkin swirl bundt cake with a dark chocolate glaze. It was provocatively rich and moist with a flavor that lingered on my palate. The most amazing thing was I made it with Earthbalance vs. butter.

The most delicious thing I ever baked was a pumpkin cheesecake. My friend asks me to make it again every time she sees me! (And we see each other like once a week.)

By the way — just read through your story. Super inspirational. At 25, I was diagnosed with rheumatoid arthritis and took to a vegan lifestyle to battle it. It’s only been three months, but I never see myself going back. I’ve been (lazily) GF for a few years now, but I think it’s time to buckle down. Thanks for the virtual encouragement!

My favorite is still the Chocolate Poundcake. It’s not too sweet, but with lots of delicious goodness.

I make really good caramel bars that have toffee and chocolate chips, but I’m known for my carrot cake (I’ve used the same recipe for 50 years!). My biggest dessert success didn’t really involve baking–I made a delicious ice cream cake (with Dulce de Leche and Reese’s peanut butter cups). oh, I also make a really wonderful fresh strawberry o’cheese dessert (I bake the shortbread crust). Thanks for the giveaway!

The most delicious thing I’ve baked would have to be Chocolate Caramel Shortbread Bars. They have a layer of shortbread topped with caramel topped with chocolate! They simply melt in your mouth from all the buttery goodness. So definitely those… Or maybe just a plain old batch of chocolate chip cookies. Impossible to decide!

The most delicious thing I ever baked was a no-knead beer bread … back when I was a gluten eater. Oh … and an amazing chocolate cake when I was 12 or 13 – it had mayo in it. My family still talks about it (maybe because I haven’t baked anything that good since then!).
